The Fraijanes plateau sits beside the active Pacaya volcano, where frequent ashfall and light, porous soil create unusually nutrient-rich growing conditions. This lot comes from one farm on those slopes — and we process its harvest two ways so you can taste the difference. This is the natural.
Natural processing means the beans dry whole inside the fruit, so the cherry's sugars sink deep into the bean. Medium roasted, the result is bold and fruit-forward: full-bodied and sweet, with a soft acidity and a lingering finish.
